Ingredients: (Serves 2-4)
10 pieces of watermelon (cut into cubes)
1 lb fresh peeled shrimp
handful of mint leaves
Feta or Goat’s cheese (cut into just a few pieces)
Salt and Pepper to taste
Sprinkle of chili flakes
Simply prepare all ingredients by cutting them into cubes and mix well in a bowl. Add the avocado in last so the salad doesn’t go mushy. And that’s pretty much it.
Note: I didn’t use a dressing since I’m not really big on dressings on my salads, but here’s one that would give the salad a kick: 2 tablespoons of pomegranate concentrate mixed with 2 tablespoons of orange juice and a splash of fresh lemon. Pour over the salad just before serving.
