Spicy Home Fries

This dish serves as an accompaniment to salads and grilled or baked chicken dishes and resembles what Americans term as “home fries.”

 

 

Ingredients: (Serves 6)

7 red potatoes (small to medium size)

2-3 tablespoons of crushed or blended ginger and garlic (about 1 inch piece of ginger and 3 garlic cloves)

3/4 tsp salt

1/2 tsp crushed red chillies

3/4 tsp crushed whole cumin seeds

3-4 coriander seeds (crushed)

(Optional) 3/4 tsp chaat massala (found in most indian stores)

1-2 tablespoons oil

 

How to:

1.  Cut potatoes (leaving skin on) into small cubes (about the size of a thumbnail). Wash well and allow to drain.

2. Place all ingredients into a bowl and mix well.

3. Place in oven for 30-35 mins on 360-375 degrees c.  Add water half way through to allow some moisture to get in.

 

Recommendations: Can also try with fingerling potatoes, or russet potatoes. Recommended with Easy Baked Chicken and a hearty salad. Or do as the Americans do, and have it with an omelette for breakfast!
