Spicy Avocado & Fruit Salad

If you’re one of those people that never seems to find the time to grab a piece of fruit, try this recipe. It’s packed with great fruit, is quick to make and tastes so so good!

 

Ingredients: (Serves 6)

2 Apples (your choice)

2 small avocados or 1 large avocado

2 nectarines

2 peaches

3 satsumas or clementines (any kind that you can peel into segments)

2/3 fresh green chillies

A handful of fresh coriander leaves

Dressing: lemon juice, salt, sugar

 

How to:

1. Wash and cut all fruit into similar sized pieces.

2. In a bowl, mix all above fruit with a handful of freshly chopped coriander and the sliced green chillies.

3. Prepare the dressing by using 3 long squirts of lemon juice, 1-2 tsp sugar and 1/2 tsp salt. Check to ensure it tastes the way you want it to.

4. Pour the lemon juice over the fruit right before serving. Adding it earlier will release too much water.

Recommendations: Best enjoyed with grilled or barbequed foods.
