Baked Tilapia w/Zuccini

Ingredients: (Serves 2)

2 frozen tilapia fillets

1 lemon

2 tsp olive oil

1 zuccini

Spices: coriander powder, cumin powder, chilli powder, turmeric, salt to taste

 

How to:

1. Using fresh tilapia, soak in a bowl and wash well. Squeeze half a lemon into the water and continue to wash the fish. (If using frozen tilapia, soak for 20-30 mins in a bowl of lukewarm water then go to step 1 above). Pat dry with paper towels.

2. In another bowl, prepare the mix: Mix together 2 tsps of olive oil along with a sprinkle of cumin, coriander, chilli powder and salt. Add just a pinch of turmeric. Rub well into the fish.

3. Place fish on a baking tray on top of foil and cut up the zuccini (courgettes) into long thick strips or into fairly chuncky slices. (Not too chunky, just enough so they don’t get mushy). Sprinkle some salt and lemon juice over the vegetables. (You can also use any other type of vegetable of your choice to accompany this dish).

4. Place in oven on 350 degrees c for about 25-30 mins until cooked and golden brown.

 

Recommendations:  Enjoy with any rice dish, couscous, potatoes, salad, or a medley of veggies.
